The sunset actually occurs when at the precise moment when the sun dips below the surface of the horizon, however most people refer to the whole process of the sun going down for the day as the 'sunset'. Depending on how much dust is in the atmosphere can affect what colour the sunset turns out to be, and sunsets are often different colours that sunrises.
