The flavour of Italian dishes are enhanced by the locally produced oils and vinegars as well as all the other condiments on which chefs rely. Olive oil is very versatile, mainly used in cooking but can be a fuel, soap or a cosmetic aid. Vinegar comes in many tastes and flavours, malt, wine and fruit.
