An Italian discovery, sun dried tomatoes are ripe fruit left in the sun to evaporate all the water. It takes 20 pounds of ripe tomatoes to make 1 pound of dried tomatoes.This interesting display was found at a market in the village of Moustiers Ste. Marie in the Alpes de Haute region of Provence, France.The food value of sun dried tomatoes are comparable to the fresh tomatoes from which they were made from.
